typical day A Typical Day in the Job

Our kitchens are purpose built, and provide a fun yet challenging environment to work in. Many of our catering team individuals come from winter season backgrounds, or from previous summer seasons around the UK or abroad. So if you have a passion for the seasonal lifestyle and fancy swapping your snow boots for the sun and beaches of the Landes region of France then Rockley might be just what you are looking for.

You will be catering for UK school children that come and visit us for week long activity trips. Depending on your centre you could be catering for up to 250 clients and staff on a weekly basis.

As the Head Chef your responsibilities will include (but are not limited to):

- Being responsible for the management of the kitchen team inc. kitchen rotas, paperwork & further training

- Produce menu plans to cater for a variety of clients and numbers

- Be aware of the broad range of special dietary needs and be able to cater for them appropriately

- The production of all food on centre

- Ordering of food

- Maintaining the catering budget

- As a senior member of staff you will be expected to liaise with teachers and clients on a daily basis to ensure everyone on centre is catered for

As part of the catering team your responsibilities will include (but are not limited to):

- Assisting with food production for breakfast, lunch and evening meals

- Ensuring that the kitchen is kept to required standards of cleanliness at all times

- Have the skills & ability to produce basic meals independently

- Assist in producing menu plans

- Providing excellent customer service to all our clients

ideal candidate Who are we looking for?

- Current DBS certificate
- Level 2 Food Hygiene certificate
- 18 years or over
- Physically fit - able to cope with manual handling work
- A willingness to work quickly and efficiently
- Hardworking and motivated with an eye for detail
- Experience in a catering environment

For Head Chef role:
- Background in catering and the experience to produce menus suitable for children and adults
- Experience running a small kitchen team or a smaller team within in a larger catering organisation

Good to have for these jobs:
- A full UK driving licence
- The ability to speak French would be desirable but not essential
- RYA Safe and Fun Safeguarding certificate (or alternative safeguarding certificate)
